Nathan and Thordis attended the Villa Toscana Culinary Academy in January 2005. The Villa Toscana is located in California’s Paso Robles wine country. The Villa offers an incomparable bed and breakfast and will be ready to meet your gluten free diet requests when given advance notice!

Thordis Seager, long time resident of Morro Bay, California has had a passion for cooking since she was eight years old. In 1995 she was diagnosed with celiac disease, a severe condition of malabsorption caused by glutens found in wheat, rye and barley. At that time Thordis had to learn to cook all over again, this time with the challenge of omitting all of the gluten in her diet. With great persistence she blended alternative flours until mastering mixes that work on a par with wheat flours.

These discoveries are shared in her first cookbook, Simply Delicious, Wheat & Gluten Free Cooking, published by Central Coast Books.
